This Banana Bread is one I tried to copy from the best Banana Bread I ever had in Hawaii.

I simply guessed it’s ingredients and came up with this: It is pretty similar.

½         cup      Butter, melted
¾         cup      Sugar
4                      Eggs, slightly beaten
3                      Bananas, mashed
1/8  cup          Coffee
2     tsp           Vanilla extract
1 ¼      cup      Whole Wheat Flour or Spelt Flour
½         cup      Almond Meal
1½       tsp       Baking powder
¼         tsp       Baking soda
½         tsp       Salt
¼         tsp       Cinnamon
     
      Don’t over mix
Bake 45 minutes at 350 degrees
Two loaves 9×4 pans buttered

Late Summer Peach Mousse

Although we call this peach custard it works wonderfully with any summer fruit. Another one of our most favorite options is apricot.

Serves 6

1. In a medium pot cook until soft:
12 Peaches sliced thin

2. In another medium pot mix together:
(dissolve Kuzu in 2 Tbs. cold water first)
6 Egg yolks
3 cups Milk
1/4 cup Sugar brown
2 Tbs Kuzu

3. Cook till thick, stirring constantly about 10 minutes. Then add:
3 Tbs
Butter
1 tsp
Vanilla
1/4
tsp Nutmeg

4. Once custard is cool combine and gently stir in half of the cooked peaches to the custard.

5. In a large bowl whip till stiff then fold into custard:
2 cups Heavy cream

Serve chilled in individual bowls with remaining peaches as a topping.

 

Peaches, Peaches, Peaches!

Our abundance of peaches is bestowing itself upon us. we are discovering endless ways to enjoy them. Below is our Peach Cobbler recipe, which is so simple, it seems silly to call it a recipe… but we felt is was worth mentioning because it is SO delicious. Note: in season peaches is the secret.
Our Peach Cobbler
Preheat oven to 350°
1. In a large pot cook on low heat until softened:
12 Peaches, sliced
1/4 cup Water
2. Pour lightly cooked peaches into a large strainer.
Save juice.
3. Place peaches in a buttered 9×9 square bake pan and add:
1/2 tsp Nutmeg
4. Cover evenly with:
3 cups Granola
(There is a recipe in our cookbook
or make or buy your favorite granola).
5. Sprinkle with:
1/2 tsp Nutmeg
1/2 cup Peach Juice
Bake at 350° for 15 minutes.
Serve with Coconut Bliss, coconut ice cream.
